- 2 tablespoons of vegetable oil
- Salt and black pepper to taste
- 1 tablespoon of soy sauce (optional for extra flavor)

Steps to make it:

1. Put a large pan on the stove and turn the heat to medium. Add 1 tablespoon of the oil and let it warm up for about 1 minute.
2. Add the chicken pieces to the pan. Move them around with a spoon or spatula for 5 minutes until they turn white on all sides and are no longer pink inside. Take them out of the pan and set them on a plate.
3. Add the remaining oil to the same pan. Throw in the onion, bell pepper, and carrots. Stir them for 4 minutes  they soften a bit but still have some crunch.
4. Put the chicken back in the pan with the vegetables. Add a pinch of salt, some black pepper, and the soy sauce if you're using it. Stir everything together for 2 more minutes to mix the flavors.
5. While that's happening, heat the rice in the microwave for 2 minutes if it's not already warm.
6. Spoon the chicken and vegetable mix over the rice on plates. Eat right away.

Steps to make it:

1. Fill a pot with water, add a big pinch of salt, and put it on the stove over high heat to boil. This should take about 5 minutes.
2. While the water heats, put a separate pan on medium heat. Add the olive oil and let it warm for 1 minute.
3. Add the chopped onion and garlic to the pan. Stir them for 2 minutes until they smell good and the onion looks clear.
4. Add the ground beef to the pan. Break it up with a spoon and cook for 4 minutes, stirring often, until it's brown and no pink remains.
5. Pour in the crushed tomatoes, add some salt and black pepper, and stir. Let it bubble gently for 3 minutes to thicken a little.
6. By now, the water should be boiling. Add the pasta and cook it for the time on the package minus 1 minute (usually 7-8 minutes total) so it's firm. Use a colander to drain the water.
7. Mix the drained pasta into the sauce in the pan. Stir for 1 minute over low heat. Add the basil if you have it.
8. Serve in bowls.

Tuna Salad Wraps with Vegetables

- 2 cans (5 ounces each) of tuna in water, drained
- 4 large flour tortillas or wraps
- 1 cucumber, washed and sliced thin

- Juice from half a lemon

Steps to make it:

1. Open the tuna cans and drain the water. Put the tuna in a bowl.
2. Add the mayonnaise, lemon juice, a pinch of salt, and some black pepper to the bowl. Mix with a fork until creamy, about 1 minute.
3. Lay out the tortillas on a clean surface.
4. Place a few lettuce leaves in the center of each tortilla.
5. Spoon some tuna mix on top of the lettuce.
6. Add slices of cucumber, tomato, and avocado over the tuna.
7. Fold the bottom of the tortilla up, then roll the sides in tightly to make a wrap. Do this for all.
